Almond and Apricot muesli bars

3 cups (300g) rolled oats

3 large eggs

1 teaspoon vanilla essence

1 teaspoon cinnamon

¼ cup olive oil

¼ cup maple syrup

 ½ cup diced dried apricots

 ½ cup currants

½ cup almonds, chopped

 ½ cup pepitas (pumpkin seeds)

Method

Preheat oven to 160 degrees.

Combine all ingredients.

Line a 30cm x 20cm slice tin with baking paper and press mixture in.

Bake for 25 minutes or until starting to turn golden.
